Ten Minute Meal Project # 1 Shrimp Salad



Hello! I just got this very cute and small recipe book titled - Ten Minute Meal Recipe. There are 200 pages of meals that the author claimed that I can prepare for 10 minutes. I want to prove if the author's claim is a myth or a fact. I chose 10 meals out of the 200 and I  will be posting 1 (one) Ten Minute Meal each week, so stay tune.

I chose this Shrimp Recipe today because my family are not used to eating salad, so we are kind of trying to incorporate salads in our Sunday lunches. We are so used to sautee' ng our veggies. It is a big adjustment for all of us.



When I  got this recipe book, I was thinking that each meal can be prepared within ten minutes including the preparation of the ingredients. I guess, I am just stretching it too much, because washing and cutting the vegetables alone took me more than ten minutes. I realized it quickly. So, it looked like the author meant that I have to prepare the ingredients first then the span of cooking or making the meals take only 10 minutes. So, I set my timer from the cooking time itself and see if it is within ten minutes.





VERCDICT:  FACT !


Yup, I can toss this salad in less than 10 minutes but the preparation of ingredients surely took a long time. Nevertheless, we liked this salad. My daughter did not care for the cucumber, so I am thinking that I am going to add in a mango in the recipe instead of cucumber. Actually, the original recipe called for mango, but since our store did not have mango available,I used cucumber instead.

NOTE: Next week's Ten Minute Meal Project # 2 will be Beef Red Thai Curry

Ingredients:

Dressing:

Juice from 1 lime
1 tbsp white vinegar
2 tbsp Sesame oil or any oil type of oil will work
1 tbsp sugar
1/2 lb cooked shrimp

Salad:

10 pcs of lettuce leaves ( washed and cut into bite size)
1/2 lb cooked shrimp
1 pitted avocado
1 pc of sliced cucumber or mango (pitted)
Salt and pepper to taste

Direction:

Place oil, sugar, lime juice in a bowl and whisk until the sugar is thoroughly melted. Add in cooked shrimp and mix mixture to coat the shrimp. Set aside.
Place the lettuce,cucumber in a salad bowl or plate. Place the avocado on top. Pour in dressing on top of the vegetables and mix  gently. Add in salt and pepper if desired.

Summer Fruit Salad



I am not sure if I should post this summer fruit salad recipe because I presume everybody knows how to do this. But since I have a  ripe mango, peaches, banana and avocado sitting in the counter screaming at me, I decided to do this anyway. But my family have been enjoying this dessert whenever summer fruits are available.

 I learned  how to do this through my mom. When we had a lot of fruits in the house, my mom just whip this up, put a little ice and condensed milk, and we had our dessert. Though you can substitute condensed milk with honey, I highly vote against it because truly, it is the condensed milk that make this salad extra tasty. 


You can also add in ice or you can chill this.But usually, my children just devour this without it making to the fridge. You can also add lemon but it is still okey without it.It is up to you what to decide.


When I first came here, there were some fruits that I was not aware that even existed. Strawberries, raspberries, blackberries, blueberries  were stranger to me. Apples were also very rare in my country so I had a some kind of culture shock or rather " fruit shock" when I arrived.When we moved here in the Midwest,  tropical fruits are rare sometimes, so I have used this recipe with various fruits  that are in season.So make this with strawberries, blueberries or raspberries and add in condensed  milk and you will have your yummy dessert.




Ingredients:

1 avocado
1 banana
1 peach
1 mango
1 to 2 tbsp condensed milk or honey
Cubes of ice (optional)
1 tsp lemon (optiona)

Directions:

Slice the fruits into small pieces. Put in a small bowl then add in condensed milk. Mix gently so as not to make the fruit soggy.

Serve and Enjoy!

Chicken Salad - A Little Kindness Goes A Long way

I had been on my edge for the last two weeks now. With my clinical which never came then my license probation. Nope. I did not do anything bad. I just have some issues regarding my continuing education credits which almost drove me crazy. I am a Radiologic Technologist by profession. I have two licenses for it but I am not working as a Rad Tech. You see, I have been a stay at home mom for two years now. But I always tried to keep my license since it is a big part of who I am and it is one of my big accomplishments. So while staying home, I am taking classes for it to stay active. This March, some classes that I reported were not approved, and my license has been noted as under probation. I have to meet certain requirements or else I will lose it this month, August 31st. 


So I took classes this summer, from June 10 to August 15 , but it looks like the board were not satisfied of just receiving my note that I have done it. They wanted proof, which is just appropriate. But I was hoping they will take my documentation that I did well in the class since I am so tight with time. Also school  records will be released by the 17th. Boy, I am starting to panic. Plus my problem with the clinical schedule, I have been so upset! I have been burning my phone calling all the necessary people with regards to this... I got my grades online and sent the office unofficial transcript and they still did not lift the probation... Now, I am getting crazy! 


I called the board again today and there was this girl named Natalie. I have to ask her up front to look at my unofficial records and tell me if it is enough to meet the requirements to lift the probation. She said, " Wait a minute, okey ?" She said the last word OK  sooooo gently that when I heard the music in the background, I was literally sobbing.  All the desperation just poured out.She said OK so kindly. OK never sounded so great. She came back on the phone and said  that they accepted the report and will lift the probation as soon  as today. Gosh, I was so haaaaaaaaappppppy! This girl is a bearer of hope. I consider her an an angel.

One thing that struck me the most is how a little kindness can go a long way. I tend to use my words and my voice haphazardly that I may not know their effects to other.. This Natalie girl, she just accomplished her purpose today. She brought good news that my probation has been lifted, she inspired me to try to speak sweetly and she made me realize to be kind at all times... Natalie, I may not know you, but may God Bless you.


For Boiling Chicken
1 cup Water
1/2 tbsp salt
5 pcs of the frozen sliced chicken breast in the groceries

1/4 cup celery
1/4 cup carrots
1 box raisins
1 tsp sugar
1/2 cup light mayonnaise

Boil chicken breast with water and salt until cook. Let the chicken cool down then shred in a large bowl. Add in the last 4 ingredients and mix.

For Serving:

You can use croissant, sliced bread or Pita pockets or you can eat it by itself. I noticed that it gets watery the next day, so I suggest to make just enough for you. This recipe is good for 4 sandwiches.
