I am getting into the fourth month in this blog and I have not shared something very important to me. It doesn't   need a lot of words to explain it, but this has been my pillar and  my compass. Everything around me changes but these remain the same

Sure, I swayed from them so many times, disobeyed and found them difficult to follow, but these have been my reference point when I make decisions and when I am in doubt on  how to behave in certain circumstances. These have been my gauge whether I am doing well or wrong in my life's journey.These are my principles.
Delicious Cauliflower Soup

Principles are very important. Without them, we will just be walking in our life's journey without direction; and are often affected by circumstances. Eventually, we will become a person without character. Whether our principles are good or bad, they will certainly shape us. Below are my principles :

THE TEN COMMANDMENTS:

  1. Thou shall have not other gods before me.
  2. Thou shalt not make unto thee any graven images.
  3. Thou shalt not take the name of the Lord in vain
  4. Remember the sabbath day to keep it holy
  5. Honor thy father and thy mother
  6. Thou shalt not kill
  7. Thou shalt not commit adultery
  8. Thou shalt not steal
  9. Thous shalt not bear false witness against thy neighbor
  10. Thou shalt not covet anything that is thy neighbor
I am pretty much a very sensitive person and I get easily sad or I call it depressed. For this reason, I have collection of words of wisdom that carry me through the bad days. I want to share it to you from here

Today, I made a one of a kind soup. It is black in color. I did not really intend this to become black as this, but it did. I did not mind, because the color added character to its look. And the taste does not disappoint either. This is tasty and delicious. Aside from its health benefit, don't you think it looks pretty too? In the photo, I added sesame seeds, basil and mascarpone cheese but they are optional. You can skip those. You can replace avocado for mascarpone to really make it healthier. This is almost similar to Spinach Soup


Cauliflower Soup


1 head purple cauliflower
3 cups Almond Milk Vanilla Flavor
1/2 cup Basil Leaves
1 1/2 cup water

Serve with sour cream or mascarpone. I just used mascarpone, since I have some left when I made Sponge Cake.
Replace sour cream with avocado for healthier option then add in some basil leaves.


Clean and cut cauliflower into small pieces. remove stem.
Place ingredients 1 to 3 in a large saucepan. Bring to a boil until cauliflower  is soft. Around 30 minutes. Add in water. And boil some more for 5 more minutes
Place in a blender and blend until mixture is totally blended.

NOTES:
Garnish with Basil, Mascapone cheese/ avocado and rye bread. Serve immediately

Arroz Caldo Recipe (Chicken Rice Porridge)


 When the season changes, it is expected that my son will eventually get sick. It has been like this for the past nine years, that it has become like a norm to me. I do not get as worried as I did before.

Yesterday was no different. He is starting to cough and his nose is stuffy. Whenever he gets sick, he always clamor for Chicken Porridge. I am not sure if he is just being a kid but I find it cute that sometimes it feels like he is pleased that he is sick because it is an excuse for him to eat this meal. We always obliged at his request at the pleasure of his sister who tends to be always healthy (thank God).


So yesterday, we had some chicken porridge for him and we made it as our dinner as well. When I was little, I haven't remember my mom cooked this meal because it is always available in the sidewalks near my house. I always buy it for .25 cents and that is my 3 PM snacks. There were other street foods available also:  turon (banana wrap in spring roll wrapper), banana que ( fried banana with sugar), hot mongo (beans with coconut milk) and so many others. I remember sitting with my friends on the sidewalk with our bowls, relishing our well sought snacks.


 My son is a little better this morning and chicken porridge was his breakfast. He  wanted boiled eggs on top and he insisted that I do not put in some onion leaves nor roasted garlic in it. What a shame, those garnishes made this menu extra delicious and he want to skip that. I also recommend not to skip these garnishes because in my opinion, if you skip it, it feels like there is something lacking. The toasted garlic's bitter taste and aroma enhances the ginger's spiciness and the spring onion/leaves' rawness makes it extra delicious. I used the chicken stock left over from the chicken salad recipe I made for last week.here and just froze it for the time when I needed it.




Ingredients:
Serves 2 to 3

1/2 pound chicken breast thinly sliced
1 cup uncooked rice
1 /2 cup shredded ginger
1 small onion chopped
4 cups chicken stock
3 cloves ground garlic
Boiled egg
Cooking oil for roasting the garlic
Salt to taste
Spring onion/leaves


Direction:

Put a small amount of cooking oil in the big pot. When the oil gets hot, add in the ground garlic and cook until golden brown. Using a spoon, remove the garlic and set aside.

Using the same pot you used in cooking the garlic, add in ginger and let its release its aroma, add in chopped onion and let it cook. You can tell that the onion is cook when it appears transparent or when it releases its smell.

Add in the chicken breast. Let the breast brown on each side and let it sit a little and let is simmer. When it is cook, add in rice and stir so that any moisture will adhere to the rice.

Add in chicken stock. Let it boil in a low fire until the rice is cooked. You can tell the rice is ready when it looks fluffy and when it is soft when you press it with your thumb and index finger.

Add salt to taste.

To serve:

Put the porridge in a bowl then add in thinly sliced boiled/cooked egg , fried garlic and chopped onion on top.

Serve and Enjoy.

Sweet Potato Soup in Cleansing Broth - My Kids Praying

 When life gives you more than you can stand, KNEEL.


I was browsing through old picture and I found this. How time flies. These was taken when my son was two and my daughter was six.  I cannot remember what they prayed for then. Currently, my daughter prays for sweet dreams and my son prays for our dog Oreo, pictured below,who was adopted by my sister- in- law.

I told them they should start praying about their future - that they will work hard and become successful. They did not listen though, so pretty much prayer time is about our dog.






When I was in high school, my mom told me to pray for my future husband. I did pray that God will give me a husband, but the problem was, I thought that the men that came my way will become my husband. So, I pretty much broke my heart so many times. Thank goodness, I did meet him. He is a good man, a good provider and a patient man who tolerate my wacko-ness. Prayers are answered I believe. Although not immediately nor not how we envisioned it to be, but it is answered accordingly. Ultimately, for what is best for us.

Anyway, I have here the sweet potato recipe from the cleansing broth I made. Please browse below for the recipe.




Ingredients:

2 cups cleansing broth - recipe here
Left- over sweet potato from the cleansing broth
Avocado
Salt and pepper to taste

Boil the cleansing broth and add in the sweet potato. Let cool and the blend. Serve with avocado and add in salt and pepper to taste.

Serve and Enjoy.

Broccoli- Spinach Soup in Cleansing Broth- Feeling so Blessed

I am not feeling well today, so I just holed myself in my bedroom. I had a very bad headache and I just feel so dizzy. Today is my son's first day of school, so I have to get up and tried to prepare him for it. I said tried because my son, the sweetest thing, with arms and hands gesturing a stop sign said, " Mommy I can do it, just go to bed." I just have to give in because I am just too weak to stand up. I heard him prepared his breakfast, took a bath and then kissed me good bye. I have to see him go with his bike and I felt so grateful.


The house is so quiet. The kids are gone for school and I am by myself. Being sick as this, I am lost as to what to do. I mentioned the last time that I have few chapters to getting done from my Bible reading, I decided to get it done today. I am finally finished and  feel accomplished. I decided to browse the Book and I tried to meditate on its words and verses. Again it is so quiet in here. I began contemplating and I am brought into a silent shout of gratitude. I am so blessed,  indeed. I have great family, good parents, kind in laws, wonderful husband and healthy children. I am so grateful. This moment of solitude is not bad at all.


Today, I am going to share to you a recipe inspired by Whole Living. It started by making your making own vegetable broth which is called: Cleansing Broth. I am not used to eating soup but I like this one. There is no cheese, just avocado to make it a little creamy.



Cleansing Broth's Ingredients: (yields 9 cups of cleansing broth)

1 large chopped onions
6 pieces carrots - chopped
1 bulb/head garlic
2 large chopped sweet potatoes
1 bunch fresh parsley
12 cups of water

Direction:

Place all the ingredients in the slow cooker and cook in low for 8 hours. If you do not have slow cooker, just boil the veggies. 
When ready, discard the vegetables except the sweet potato. I put the potatoes in a container and freeze for future use

For the broth, I separate it in a container, 4 cups each, and freeze. 

Broccoli and Spinach Soup Ingredients

1 head broccoli
2 cups spinach
1 avocado
salt and pepper to taste
4 cups of the Cleansing Broth

Get four cups of the cleansing broth and put it in a pot and bring to a boil. Add in broccoli. When broccoli are soft, add the spinach and turn off fire.  Let it sit until cool. 
Put the mixture in the blender and blend. Set aside.
Slice the avocado and garnish it on the soup.
 Note: You can blend half the avocado with the other veggies. This make it so creamy. But the disadvantage is, you cannot eat  the left over the next day. So I use it for garnish.

Serve and Enjoy.

Tomorrow, I will post the sweet potato soup. This recipe is adapted from Whole Living. I just tweaked a little of the recipe and ingredients to fit my taste.
